Quesadillas
12 flour tortillas
3 cups Monterey Jack or cheddar cheese
1/4 cup vegetable oil for frying
Additional Ingredients: (pick one or more)
3/4 cup mushrooms
1/3 cup olives
3/4 cup chopped chicken
1/2 cup chopped tomato
1 (4 oz) can chopped green chilies
Toppings: (as many or as few as you like)
2 green onions, finely chopped
2 medium tomatoes, finely chopped
2 cup shredded lettuce
1 cup fresh salsa
1 cup sour cream
1 avocado (chopped or slice thin)
Place one flour tortilla in a skillet with a little oil over medium-high
heat. Add cheese and other additional ingredients you like. Do not put too
much on each tortilla. They should be thin. Top with a second tortilla.
Heat the quesadilla until golden brown on one side and then gently flip to
the other side.
Heat until the quesadilla is golden brown on both sides and cheese is
melted. Adjust heat accordingly.
To serve, cut each quesadilla into 4 wedges and serve with desired
toppings.
