Mexican Dressing or Dip


Makes about 2 1/2 cups

1 cup fresh cilantro leaves
3/4 cup mayonnaise
1/2 cup vegetable oil
1 can (4 oz.) chopped green chilies
1/3 cup red wine vinegar
1/2 cup cotija or feta cheese
1 clove garlic
1/2 teaspoon salt
1/8 teaspoon ground black pepper

Place cilantro, mayonnaise, vegetable oil, diced chillies, vinegar, the cheese, garlic, salt & pepper in food processor or blender - cover. Process until coarsely chopped. Cover and refrigerate for 1 hour for the flavours to merge.
