Canned Tomato Salsa
1 large can peeled whole tomatoes
1 Jalapeno pepper
1 Serrano pepper
1 small white onion, peeled and cut into quarters
Juice of half a Lemon
Juice of half a Lime
Large bunch of fresh cilantro leaves (to taste), finely chopped
Salt to taste
Remove the seeds and veins from the peppers if desired. Leaving them in
will make the salsa hotter.
Place peppers and onion in a food chopper or blender . Pulse until the
peppers and onion are chopped into small pieces but do not puree.
Add canned tomatoes, lemon and lime juice to the food processor. Process
again, in quick pulses just until tomatoes are broken up. Stir between
every few pulses.
Remove salsa mixture from the food processor. Stir in finely chopped
cilantro and salt to taste.
