Easy Chicken
Fajitas
4 boneless, skinless, chicken breast halves
1 tbsp garlic, chopped
1 tsp ground cumin
salt and pepper
2 tbsp vegetable oil
1 lime, cut in half
1 green bell pepper
1 red bell pepper
1 large red onion
12 flour tortillas
Additional toppings (as many or as few as you like)
shredded lettuce
salsa
guacamole
shredded cheese
chopped onion
piquante sauce
Preheat oven to 300 degrees.
Slice the chicken breasts into bite sized strips. Place in a bowl and mix
with the garlic, cumin, salt and pepper and 1 tbsp of the vegetable oil
and juice of 1/2 of the lime. Let this marinade while you chop the
vegetables.
Slice the peppers into strips. Skin the onion and slice it lengthwise into
long strips.
Wrap the tortillas in foil and place in a 300 degree oven for about 5
minutes.
Heat a large non-stick skillet and add the remaining vegetable oil. When
oil is hot, add the chicken strips and sauté for about 3 minutes. Add the
vegetables and continue to sauté the mixture until chicken is done and
vegetables are tender. Add the juice from the other half of the lime just
before serving.
Serve the tortilla filling in a large bowl with additional toppings in
individual bowls. Let each person create their own fajitas to their taste
at the table.
