Fresh Tomato Salsa


3 large vine ripened tomatoes, chopped
1/4 small red onion, finely chopped
1 clove garlic, finely minced (optional)
1 or 2 jalapeno peppers (seeds and veins removed for less heat if desired)
juice from 1/2 a lime (or to taste)
salt and pepper to taste
handful of fresh cilantro, finely chopped

Combine all ingredients in a bowl and allow to rest a few minutes before serving.
