Chipotle Chicken on
the BBQ
I love to slice the chicken breasts and serve them hot over
a large salad. They are also great with roasted corn on the cob or a side
of Mexican rice.
2 cans chipotle chilies in adobo sauce, finely chopped
2 tbsp thick cream
4 skinless and boneless chicken-breast halves
Place the chopped canned chipotles and 2 tablespoons thick cream in a
small bowl, and mix to combine.
Place the chicken in a large bowl, and pour the chipotle mixture over it,
making sure to coat the chicken well. Cover with plastic wrap, and
transfer dish to the refrigerator. Marinate the chicken 2 to 3 hours.
Heat the bbq and grill the chicken until cooked through, turning a few
times.
