Carnitas


This is a popular Mexican dish that consists of braised pork and can be eaten by itself or with tortillas, guacamole and salsa. It is often also used as a filling in tacos and burritos. The pork is first simmered to make it really tender and then it is baked in the oven to make it crispy.

1 4 - 5 pound Lean boneless pork loin roast, excess fat removed
1 cup salsa verde
1 large onion, minced
4 cloves garlic, minced
1 tsp cumin
1 tbsp chili powder
1 tbsp salt
2 tsp Pepper

Place pork roast in a roasting pan. Rub pork with garlic and spices.

Pour salsa verde over top of the roast and add onions to the pan.

Loosely cover the pan with aluminum foil. Bake at 300 degrees for four or until the pork is very tender when probed with a fork.

Remove roast from oven and allow to cool until you can handle it comfortably. Remove from pan and place on cutting board. Using two forks, shred the pork. Remove fat from meat.

Skim fat off pan juices. Return the pork to the pan and mix the pan juices thoroughly into the pork.

Place pan in oven at 350 degrees and heat, uncovered for 20 minutes or until pork is crispy on top. Turn pork and return to oven to crisp the pork on the other side. There should be little or no juice left in the pan.

Serve alone or as a filling for tacos and burritos.
