Cold Cucumber and
Cilantro Soup
This is one of our favorite summer soup recipes.
3 large cucumbers, peeled, seeded and cut into chunks
1 1/4 cups chicken broth
3/4 cup fresh cilantro leaves, firmly packed
1/2 cup milk
1/4 cup fresh lemon juice
salt to taste
In a food processor or blender puree the cucumber, broth, cilantro and
milk until smooth. Add the lemon juice. Season with salt to taste.
Cover and refrigerate until well chilled. Serve cold.
