Mexican Melon Soup
Of all the cold yogurt based soups we've tried, we've found
this one to be very sweet and refreshing. Try using other melons too
for variety. Easy summer soup recipes make summer even better!
One ripe cantaloupe
juice from 1/2 a lime (or to taste)
1/4 cup minced green onion
1/2 cup peeled, seeded, and diced cucumber
1 teaspoon freshly ground pepper (or to taste)
1 cup plain yogurt
4 1/2 cups canned tomato juice
1/4 cup cilantro, finely chopped
Toppings: (as many or as few as you like)
toasted pumpkin seeds
chili powder
bacon bits
chopped fresh basil
finely sliced chives or green onions
small cooked shrimp
Working over a large bowl to catch juice, scrape out enough cantaloupe to
measure 2 cups.
Put the cantaloupe and its juice in an electric blender. Add the lime
juice, onion, cucumber, and yogurt and purée until smooth.
Pour the mixture into a large bowl and add the tomato juice and cilantro.
Adjust salt, pepper and lime juice to taste. Chill.
Top with garnishes or place them out in small bowls for everyone to chose
their own garnishes.
