Breakfast Tacos
This is such an easy Mexican breakfast recipe. Of all the
Mexican breakfast meals I make, this one stands by me all day so I usually
make this when I know I'm going to be on the go all day.
6 ounces chorizo sausage
8 (6 inch) corn tortillas
6 large eggs
1/4 cup milk
1/2 teaspoon pepper
1/2 teaspoon salt
1 cup shredded Monterey Jack cheese
1 dash hot sauce, or to taste
3/4 cup salsa
2 tbsp vegetable oil or cooking spray
Crumble the sausage into a skillet over medium-high heat. Cook and stir
until browned and completely cooked. Drain and set aside.
In a medium bowl, whisk together the eggs, milk, salt and pepper. Heat a
clean skillet and add some oil or cooking spray and pour in the eggs. Cook
and stir until almost firm. Add the sausage, and continue cooking and
stirring until eggs are cooked and sausage is heated through.
Meanwhile, heat tortillas in a little oil in a hot skillet - about 30
seconds per side. Set aside and keep warm in foil.
To prepare the tacos, sprinkle a little shredded cheese onto each
tortilla. Top with the scrambled egg and sausage mixture, then add hot
pepper sauce and salsa to taste.
Makes 8 tacos.
