Roasted Tomatillo Salsa

This tomatillo salsa recipe seems too simple, but it is an authentic Mexican recipe. It is very simple and delicious. It has a dark brownish roasted color. This is a hot salsa so be warned if you can't take the heat!

1 dozen tomatillos, washed and husks removed
4 dried ancho chiles (seeds removed)
1 small onion, finely chopped
1 small bunch of fresh cilantro
salt and pepper to taste

Boil chiles and tomatillos in saucepan with just enough water to cover them for about 15 minutes. Remove from heat and allow to cool slightly (about 20 minutes)

Add chiles and tomatillos to a food processor and blender and process until chunky. Add onion and cilantro and process until desired consistency. Add salt and pepper to taste.
